7 Layer Cookie Bars

Something EASY (albeit, unhealthy) for the holidays!


If you're like me, you have BIG ambitions for your holiday baking & cooking. You want to gift homemade perogies, donuts and all those really cool recipes that you've pinned to your board. Then you get home and your couch runs to meet you, (I swear it happens this way) and you don't bother with all your plans, grab that pack of mini cupcakes from the Co-op and call it a day.


NOT THIS YEAR!

You're gonna rock it, girl, (or guy).

With some 7 Layer Cookie Bars.


Ingredients:

1.5 cups of graham cracker crumbs

0.5 cup melted butter

1.5 cup of unsweetened shredded coconut

1 cup of sliced almonds, (or whatever nut of your choosing)

1 cup of semi-sweet, (or milk chocolate) chips

1 cup of butterscotch chips

1 14oz can of sweetened condensed milk (your favourite brand, mine is the cheapest)

I like to use a 13x9 pan


Instructions: Preheat oven to 350F

1. Mix the graham crackers with the melted butter and press into the bottom of the pan.

2. Layer the coconut, nuts and chocolate/butterscotch chips, (I like to start with the coconut & finish with the chocolate & butterscotch chips) in whatever order you like.

3. Pour the sweetened condensed milk over the whole thing and gently press down with a spatula.

4. Bake in preheated oven for 25-30 minutes until golden around the edges & middle is bubbling


Cut into squares once cool and serve! (Or eat them all yourself, no one will see).
